Taco Poppers

Spicy jalapeno peppers loaded with taco fillings and topped with tortilla chips and sour cream.







Author's Notes:

  • This is a great way to use taco meat leftovers.

  • For no heat popper use nadapeno, baby bells, golden honey, melrose, Corno Di Toro, pimento, or banana peppers.


Jalapeno Taco Poppers


Ingredients

  • 20 large jalapenos

  • 1 package taco seasoning

  • 1 small onion finely chopped

  • 1 lb ground beef

  • 1 cup cheddar cheese, shredded and divided

  • 3 green onions, chopped (optional)

  • 1/4 cup crushed tortilla chips

  • Tomatoes finely minced, sour cream, or other toppings (optional)


Directions

  1. Preheat oven to 400°F.

  2. Wash jalapenos, cut in half lengthwise, and remove seeds.

  3. Chop onions.

  4. Brown beef and onion in medium skillet. Folllow directions on taco seasoning package. Cook until meat mixture is mostly dry, and cool.

  5. mix cooled meat and 1/2 cup cheese together.

  6. Fill jalapenos with meat mixture, top with remaining cheese and crushed tortilla chips.

  7. Bake in 400°F oven until cheese is melted and peppers are tender.

  8. Sprinkle with green onions, add any optional toppings, and serve.
