Scapes are the flower bud of garlic plants. Farmers often cut off the scapes so that the plant puts more energy into growing larger garlic bulbs. Scapes taste like very mild garlic. Not only is it good as a spread, it is great for flavoring your favorite skillet dishes.
Author's Notes:
Portion into ice cube trays, baby food savers or other container and freeze.
Form into a log and wrap in plastic wrap. Once set, slice off as much as you need.
This butter can be made when scapes are in season and frozen for use year round.
Scape Butter
Ingredients
2 cups (4 stick) unsalted butter, room temperature
3-5 Tbsp minced scapes
Directions
Wash scapes and coarsely chop. Place in blender or food processor and process until finely minced.
Place butter in a small bowl with minced scapes. Stir until combined.
Cover and refrigerate at lease one hour, or portion and freeze.
