A crisp gluten-free pizza crust that doesn't flop over or fall apart.

Gluten-Free Pizza Crust
Ingredients
Yeast culture
1 1/2 cups warm water
1 1/2 Tbsp yeast
2 Tbsp sugar
Dry Ingredients
3 cups gluten-free flour blend
5 tsp xanthan gum (or follow directions on flour blend package)
1 1/2 tsp salt
Wet Ingredients
2 Tbsp olive oil
1 tsp vinegar
2 large eggs
Directions
Combine water, yeast, and sugar; set aside.
Mix together dry ingredients with paddle attachment of stand mixer.
Add wet ingredients to bowl and mix for 4 minutes. Dough should be sticky.
Press into greased pan using wet or oiled hands. Poke with fork to prevent bubbles.
Bake at 400°F for 15-25 minutes until light brown.
Top with favorite toppings and return to oven until cheese is melted and starting to brown.
Make it for YOU:
Use dairy-free cheese or omit and add extra sauce.
Top with a variety of vegetables. Roast root vegetables before using as topping, or shave and top raw.
Use egg replacement or agua fava.
