Fried Scape Rings

Tender scapes in a light, crispy batter.

Fried Scape Rings


Ingredients

  • 4-5 cups scapes

  • 1 egg, lightly beaten

  • 1 cup water

  • 1 Tbsp canola oil

  • 1 tsp lemon juice

  • 1 cup flour

  • 1 1/2 tsp baking powder

  • 1 tsp salt

  • 1/8 tsp cayenne pepper or granulated onion (optional to taste)

Directions

  1. Trim ends of scapes and twist into rings.

  2. Bring a pan of water to a boil and blanch scapes for 30-60 seconds.

  3. Place in a bowl and cover with ice water. Soak 30 minutes.

  4. Combine egg, water, oil and lemon juice in a bowl.

  5. Combine flour, baking powder, salt and cayenne (if using); stir into egg mixture until smooth.

  6. Drain scape rings thoroughly; dip into batter.

  7. Fry in electric skillet or deep fryer: Heat 1 inch of oil to 375°. Fry scape rings a few at a time for 1 to 1 ½ minutes each side or until golden brown.

  8. Drain on wire racks or paper towels and serve.

 

Make it for YOU:

 


Replace flour with dredging flour (click here), or 1 to 1 gluten free flour

 

 




Use 3 Tbsp aqua fava or egg substitute of choice.




Make it Unique:

  • Use green onions or other vegetables twisted into rings.

  • Add up to 1/4 tsp granulated garlic or other ground herbs.
