Fried Scape Rings
Ingredients
4-5 cups scapes
1 egg, lightly beaten
1 cup water
1 Tbsp canola oil
1 tsp lemon juice
1 cup flour
1 1/2 tsp baking powder
1 tsp salt
1/8 tsp cayenne pepper or granulated onion (optional to taste)
Directions
Trim ends of scapes and twist into rings.
Bring a pan of water to a boil and blanch scapes for 30-60 seconds.
Place in a bowl and cover with ice water. Soak 30 minutes.
Combine egg, water, oil and lemon juice in a bowl.
Combine flour, baking powder, salt and cayenne (if using); stir into egg mixture until smooth.
Drain scape rings thoroughly; dip into batter.
Fry in electric skillet or deep fryer: Heat 1 inch of oil to 375°. Fry scape rings a few at a time for 1 to 1 ½ minutes each side or until golden brown.
Drain on wire racks or paper towels and serve.
Make it for YOU:
Replace flour with dredging flour (click here), or 1 to 1 gluten free flour
Use 3 Tbsp aqua fava or egg substitute of choice.
Make it Unique:
Use green onions or other vegetables twisted into rings.
Add up to 1/4 tsp granulated garlic or other ground herbs.
